calcium carbonate and toddlers

So my little girl who is two years old is definitely soy sensitive. After eliminating it and reintroducing it several times, every time she has soy she gets nasty poops and a smelly red itchy bottom. I tried switching her to almond milk and rice milk (her fave) because I want to wean her off of cow's milk. She just weaned off of the breast in September, and drank goat's milk for a long time in the occasional bottle because cow's made her very constipated. But she doesn't care what milk i put in her "baba" a few times a day as long as she can have one! ;o)
But i know that calcium carbonate- which is in all of the non dairy milks- can be dangerous if ingested too frequently or too much. So when she lost her appetite, ran a low temp with no cold symptoms, and started urinating every 30 minutes or so the last few days, i panicked and put her back on cow's milk. Which is in the house because my hubby insists that the kids need it (can't blame him, that's what we were all taught).
Is there a non-dairy anyone knows of which is not so heavily fortified with calcium? Unfortunately, like most toddlers, getting her nutrients in food form is a daily contest, but getting better. She absolutely will NOT eat greens, but she likes broccolli- but not everyday, and not enough to add up to what she needs. She likes nut butters and some beans, but again...
any suggestions anyone?
