lotus root substition??

I really want to make the Maple Roasted Lotus Root, Sunchokes and Leeks on pg 269, but I can't find Lotus Root. Is there anything I can use as a substitue for it instead? I know it wouldn't be quite the same, but maybe there is something that could work instead. I will keep searching for it in the meantime, thanks!

I found the lotus root at my local asian grocery store and I live in Greenville SC away from a "big city". Mine sells it fresh and frozen. That is my favorite new food from the book and my 2 year old loves it. He calls it Wagon wheels! I would call the asian grocery stores in your area and see if they have it. It is delicious!

I have the same question. Whole Foods in NYC just told me they rarely have it but told me to get burdock root instead. I wonder if this will be any good. I bought it and wanted to make the recipe tonight.

The burdock definately tastes diff. than the lotus. Try the asian grocery stores!

I can't think of any Asian grocery stores on UWS. Do you by any chance live in NYC?
