Need advice for the holidays

I recently started my vegan diet and I'm going home for the holidays. My family is very meat and potatoes and live in a rural area where health food stores are not readily available.

Any advice on things that I can pack with me to keep me on my plan? Easy recipes for Mom to fix that don't require a lot of specialty ingredients? Advice or inspiration for staying away from Grandma's gravy?

i need some help too - going to my husbands for the first time for thanksgiving. I just emailed my MIL to tell her I gave up meat and dairy...

My suggestion is that you make your own food and bring it with you, or bring things to assemble. I feel that if I have a specific diet i need to follow that I need to bring what I need to make it happen.

make a soup puree of butternut squah with sauted onions, garlic and veggie broth

a large salad with greens, dried cranberries, walnuts and balsamic dressing
or swap out the cranberries and add in roasted beets and asparagus

large baked potatoe with sauted veggies

oven roasted brussel sprouts and other root veggies with pine nuts
