Black eyed peas croquettes?

Hi!

I tried making these tonight and they fell apart in the oil. Did anyone else have this happen? Does anyone know any tips to keep them from not falling apart?

harley, these completely fell apart on me as well. i don't have a food processor, so i used a blender, and i think that's part of it. also, i fried them in a wide-rimmed pan, but they probably would have turned out better in my fry-daddy/steamer. the bigger chunks that made it out in tact tasted delicious, though, so i think with practice and the right equipment, these could be amazing. and i cannot for the life of me remember what i served with them, patty. that's terrible! i just made it a few nights ago. i'm losing it at 25!

I tried making those last night and the same thing happened... hopefully some of these answers will help because I did taste them anyways and they were pretty tasty! If they would stay together I would love to try again, but if no one has found the trick I might not waste the time.

I made these tonight for the second time & I think it is the temperature of the oil that makes them fall apart. The first time I made them they instantly dissolved, tonight they started to dissolve again & I just let the oil heat a little longer & they stayed together. I would recommend using a thermometer if you have one, I don't have one but I think it would helpful. Also, I would suggest allowing the oil to reheat a little between batchs. Out of 11 attempted croquettes I was able to actually eat 3 & they were amazing! I will definately keep trying to perfect my cooking technique for these:)

I tried to make these too. It was a little embarresing because my parents friends came over and they saw me cooking this vegan meal that was just falling apart and not right and they were like "its because ur not using any dairy or meat". I was so frustrated lol... My oil was pretty hot, it was bubbling... Maybe it was too hot? IDK!!! HELP!!!
