Doing the Vegan week long menu plan in the book!

Hi everyone, I have been doing Vegetarian for about 3 weeks now and today I am starting the Vegan Menu Plan :) I did my grocery shop yesterday and am hopefully prepared! Since there are no Vegetarian restaurants where I live, (the closest is almost an hour away!) I am going to use recipies from the Concious Cook book on the nights it suggests going out! If I do end up in a restaurant then I will pick a Vegan item. So far I haven't craved meat, it never really did anything for me anyways-thankgod! My kids and hubby are along for the ride as well :) So I will definately let you know how it goes and how the recipies are!! I can't wait!!!

I'm in Jacksonville, FL and its very hard to find vegan recipes here as well. I find myself carrying a cooler with my own food most days.

This is great! Good luck. Let me know what your kids enjoy. I have two super picky eaters that live on crackers and ramen noodles and luckily fruit.

Thanks! I would be thrilled if my kids would eat black beans or chickpeas. My daughter will occasionally eat hummus but that is rare. Beyond that, a bean never makes it in her mouth.
