Pink Elephant in Norman is great from what I hear! Also I love Sage it's in Midtown in Deep Duce. The Wedge has great veggie options there; I love their salads you can even splurge one night and get a veggie pizza with only veggie toppings and roasted garlic sauce. The Wedge is organic I am not sure about the other two you can call and ask or I will ask them the next time I go.
