Help im in a veggie rut!

Does anyone have any simple veggie recipes or ideas? I love veggies but lately I have just been eating steamed broccoli and asparagus or salads with no dressing and its getting boring! Thanks in advance for your help :)

goodness...the possiblities are endless, well beyond steamed broc and asparagus. Why no dressing?

Last night I made sauted zucchini, mushroom, garlic and onions with a lemon, capers and a little veggie broth, tossed it with whole grain pasta for a mock Picatta pasta

saute some spinach with garlic and mushrooms and alittle crushed tomato and water, salt and pepper for a yummy soup.

Roast some beets and serve on a salad with mixed greens, steamed asparagus and toss with balsamic vinegar and olive oil

half and hollow out a acorn squash of it's seeds and fill it with sauted onions and garlic mixed with cooked couscous and seasoning. Bake it to soften the quash and enjoy! yummy Fall New England area treat.

roast some cubed butternut squash with some olive oil, salt, pepper and chili flakes. Toss the cooked squash with some spinachleaves or field greens, walnuts, cranberries, and a little balamic vinegar and olilve oil for a yummy salad

goodness...i could go on for hours listing things. :o) let me know if you want more ideas

Wow - Mary Ann! Thanks for all the awesome ideas. I am going to email this to myself for when I run out of ideas. All this sounds great - especially the squash! I love squash and I love eating veggies that are in season b/c then I can eat local, too!

wow thanks for all the ideas! they help for sure..i am beginning to branch out into actually making veggie dishes (rather than just steaming or making a salad) and i am being introduced to a whole new world! its amazing..add a few things and you can make an amazing dish.

i'm actually making a great meal tonight and I thought I would share to give you some more inspiration...

i'm going to knock off Arroz con pollo (spanish rice and chicken) but i'm going to use chickpeas instead of chicken and i'm going to use brown rice vs. white.

saute onion and garlic, maybe toss in a few chopped zucchini chunks, add in some chopped green olives with pimento and some saffron, brown rice and veggie stock ... let it all cook together until the rice is cooked through and the toss in chickpeas, lots of chopped parsley, salt and pepper to taste and maybe a drizzle of olive oil on top before i serve.

sounds good right? have a little salad beforehand and then this as the main course. yum!
