Pecan Crusted Seitan

I made this last week for my family dinner (I am secretly converting them to veganism by cooking three vegan meals a week) and they LOVED it. My mom and step-dad particually enjoyed it because of the seitan's chewy texture and its ability to absorb all of the flavors. According to my step-dad this is a "five star" recipe. Thanks Alicia!

I also made this last night for my boyfriend and myself. (He is hesitently joining my new journey, but is very supportive. I thikn he just loves saying say-tan, :) )

We made our first visit to Vitamin Cottage to find this seitan and the other items. But, the only seitan that VC had was chicken flavored, and I was shocked by the sodium content! Yuck. I had my heart set on making this recipe so I bought it anyway. I rinsed it off to try to rinse off the salt. It was very good actually, but noticeably salty. I had a hard time eating it all.

BUT, the seitan passed the test with my boyfriend, and me! We really liked the texture; it does a nice job mimicking meat. I am going to visit Whole Foods and hope they have unflavored.

Also, the rustic pasta was yummy! One more dish from The Kind Diet to add to regular rotation!
