Hi everyone!
I am in my second week of living a vegetarian lifestyle. I love beans but have no idea how to incorporate them into being a main dish. I could just throw some kidney beans into brown rice but that could get boring.
Does anyone have simple yet tasty bean recipes? I would love something to compliment Tabbouleh or Alicia's Quinoa w/ Basil and Pine nut dish.

I struggle with this a little as well...for me though it's that I've always viewed beans as part of the side dish to a meal vs. the main course.
three of my favorite ways to incorporate them are:
Greek style salad: greens, tomato, cucumbers, red onion, kalamata olives (I like to soak mine in water to remove some of the saltiness), chickpeas ...toss it all with lemon juice, olives oil, dried oregano.
Mexican Veggie Burrito: i like to make my own refried beans by cooking my own pinot beans (or you can use canned) and then mash them up with garlic, and seaonsings (I toss everything in the blender and pulse till consistancy I like). I smear it on a corn tortilla or pita bread and top it with grilled veggies, wrap it up and eat! so good.
Quick black bean soup: saute some chopped garlic and onion, add to that 1 can of drained and well rinsed black beans and 4 cups (or can fulls) of water, and two large tablespoons of your favorite salsa. Bring to a boil and let cook for about 5 minutes. serve with some corn chips and a sprinkle of cilantro.
