Pecan-Crusted Seitan, Steamed Bok Choy, Peanut Butter Crispies, Crisy Tofu with Orange Dipping Sauce...hmm good

This weekend was very productive for me. I tried the Pecan-Crusted Seitan...I was nervous about it, wasn't sure how my family would like it. And my husband LOVED it. So that was a success!!! Next time I will make my own Seitan instead of buying it from the store. The Crispy Tofu with Orange dipping sauce was so simple and very good. This will definitely be served again. I am a new fan of the Steamed Baby Bok Choy Drizzled with Ume Vinaigrette and steamed collard greens. We actually had both on Saturday and Sunday night. I also love the Miso Soup....we have been making it a lunch time favorite. AND the CRISPY PEANUT BUTTER TREATS WITH CHOCOLATE CHIPS ARE RIDICOUSLY GOOD!!! My husband and I ate an entire pan in 3 days J!!!! I also tried out some recipes from another sight: Smoke House Almond Gravy served with Herbed Whole Wheat biscuits were very easy and very satisfying. My husband was a big fan of biscuits and gravy and was saddened at the thought of never having it again. But amazingly enough he thought the smoked house almond gravy was a GREAT substitute.
I have lost 7 pounds and feel better than I have felt in a very long Time!!!

Do you hae a recipe for homemade seitan - you mentioned next time you would make your own. Thanks for the reccomendations - can't wait to try them. Still a little scared about Seitan, but I definately want to try it :)
I will post the Smoked House almond recipe tomorrow. It was darn good and extremely easy to make. I bought the Real Food Daily cookbook by Ann Gentry and she has two different recipes in there for Seitan....one that works better to replace Chicken and the other is to replace beef. I will post both of those later as well.
