So I took my meat and 2 vegie eating mum to a mini vegan festival. We ate some really yummy food, talked to heaps of people about the benefits of veganism and at the end of the day my mum confessed that whilst she didn't think she could go vegan (something about milk in coffee!) she could definately cut out meat. I was so happy to hear her saying that!!
the funny thing is she said that she would be ok with not eating meat but couldn't call herself a vegetarian because she wants to have the option of eating meat if she feels like it!! I'm going to make her more and more really yummy vegan things so she never feels like meat again!!

Great to see that kind of turn-around w/ mom! I like my coffee too. My wife laughs a little when I say I'll only drink organic fair trade coffees. I'm a creamer person too. One thing your mom may consider is the Silk creamers:

If she doesn't want flavor and just the cream that's fine because they have an original too. You really cannot taste the difference. Here's the ingredients for the Original flavor:

Organic Soymilk (Filtered Water, Whole Organic Soybeans), Palm Oil, Maltodextrin (from Corn), Organic Evaporated Cane Juice, Soy Lecithin, Potassium Phosphate, Sodium Citrate, Tapioca Starch, Natural Flavors, Carrageenan.

I use the "So Delicious Coconut Creamer" and I cant tell a difference. I was a die hard Half and Half drinker in my coffee and this is the first creamer I have come across that made me not think about what I gave up... My advice.. Try and try until you find something that is what suits your taste buds the best.. But Know this!!!! There is always a vegan subsitution out there that you will love!
