Culinary School bringing great difficulties

Hey everyone! First post here at the Kind Life, though I pre-ordered the book months before its release and I love it to little tinny pieces. And here's my issue:
Apparently I'm a flirt, which I'm fine with. I'm a dedicated vegetarian and I was a vegan for a year and though I loved it, being a full-time devotee didn't gell with my finances as I'm a college student living in a small community of about 25, 000 where vegan products are few and far between and silly expensive!
And now, to make matters worse I'm in culinary school where the focus is on classic French cuisine ie. butter, lard, cream, meat up the ying yang, and other little nasties. Not only do I have to handle these things but tasting is often required so I don't serve the chef an overcooked Beef Rouladin. Butchering is also common and sometimes I can't help but feel disgusted with myself while the other students zip around and do it like it's cutting potatoes.
Anyway, does anyone have some kind of detox drink or method I could use to rid myself of all this junk I consume in class, keeping in mind that I live where specialty products are very limited?
i don't want to be to blunt but i guess the question has to be asked, why are you studying a subject that you don't believe in? If you want to be a chef of vegetarian cuisine why can't you study that?
or is the french cuisine course part of a larger degree?
I am also in Culinary School. I was told I had to taste, but it would be fine to spit out whatever it is that we were tasting. That way you don't allow it to go into your digestive system. I feel for you, but I had the same issue. I know that it's something that's just par for the course in Culinary School.
