Mac & "Cheese"!

Any amazing recipes out there for a delicious, decadent vegan mac & "cheese"? :)

My favorite vegan macaroni and cheese recipe comes from skinny bitch in the kitch (def not superhero)
macaroni and four cheeses
1 T refined coconut oil plus more for the casserole dish
2 T fine sea salt
1 pound whole wheat or brown rice macaroni
2(10oz) packages frozen pureed winter squash---use cascadian farms it tastes the best
2 cups soy or rice milk
4 oz vegan cheddar --use follow your heart brand
2 oz vegan jack cheese--use follow your heart brand
4oz (about 1/2 cup) vegan cream cheese
1.5 t powdered mustard
1/4 cup whole wheat bread crumbs
2 T vegan parmesan
Preheat oven to 375
Oil a 2 quart casserole dish; set aside
Cook pasta according to the package and add 1.5 T f salt to the water.
Meanwhile in a medium saucepan over medium heat, combine the squash and milk, stirring and breaking up the squash with a spoon until the squash is defrosted. Increase the heat to medium-high and bring to a simmer, stirring occasionally. Remove from the heat and whisk in the cheddar, jack, cream cheese, mustard, and remaining 1/2 T salt.
When pasta is done, drain it, then return it to the pot. Stir the cheese sauce into the macaroni. Transfer the entire mixture to the prepared dish.
In a medium bowl, combine the bread crumbs, parmesan, and the 1 T coconut oil. Sprinkle over the top of the macaroni and cheese. Place the casserole dish on a baking sheet and bake for 20 minutes, then broil for 2-3 minutes, or until the top is browned.

Thanks for this recipe, Mac and Cheese is my favorite and I have to say, I was worried how I was going to go without it once I finish the book and begin my new vegan life--I've started collecting recipes off The Kind Life site and can not wait to start experimenting with them.

I have TONS of recipes, so if there something that you are looking for just let me know and I will try and find it for you. Also Skinny Bitch In the Kitch has great vegan recipes...not super hero though.

I agree that Skinny Bitch in the Kitch has some AMAZING veg recipes... it's true that they are SO not superhero but for occaisional eater (or for your omnivore friends) the recipes are pretty super! ;) It's kind of my "junk food" cook book BUT I use it regularly! Love!
