I made Alicia's Eggplant Chana Masala, yum!

I made the Eggplant Chana Masala and it was delicious. I will definitely make it again on nights when I want something easy to prepare. The best part was when I had leftovers for lunch at work the next day and my colleague, a meat-eater who said she doesn't like eggplant, tried some and liked it!

Glad to hear Jodie! I was thinking of making this one next week. I only ate eggplant once and it was in an odd recipe that included cinnamon. Ever since then I thought I didn't like eggplant, but I want to give it another try. I think it was the cinnamon flavoring that turned me off.

I finally got the chance to make the Eggplant Chana Masala! Delicious!! I can't wait to try it with different chili brands and spices to make it my own. It's delicious and I love that it's even better the second day, like any fabulous stew!

Hi,

I'm a little confused b/c there's a section in Alicia's book that says she avoids nightshades in her diet for the most part. I've been afraid to eat nightshades ever since reading how it can contribute to digestive problems or joint function. I love eggplant... it just seems like a contradiction for Alicia to have an eggplant recipe but then say she avoids nightshades...

I am making this tomorrow, I am happy to hear good result! my biggest worry is that I bought my eggplant close to a week ago... it looks and smells fine, but I worry it may not be good anymore.

The reason she avoids night shades is because of their acid content. The KInd Diet promotes a heathy Alkaline system. If we eat to many acidic foods, we throw our ph levels out of balance. I find that if I'm really craving white potatoes, I offset the acid content by eating a lot of greens with them. Eggplant isn't a wholly acid food, but it's alkaline content is quite low. Continue to enoy it, just not every day.
