Adzuki Beans

I bought a huge bag of them because they looked adorable :) I have some quick-soaking as I type, but I'd like to know if you guys have any amazing recipes for them? I've come across a ton of desserts and stews, but curious what else is out there. I remember being in Korea and the Starbucks there had Red-Bean Frappuccinos... to die for. I might try a vegan version

Alicia's Adzuki bean and squash stew is fabulous. I just made it with carrorts instead of the squash so my hubby would eat it and it was so good. Do u have the book? Another good thing is to just cook them and put them over a grain like barley(my fav) or millet and grill some veggies and have a big macrobowl.

I do have the book... I'm making the roasted veggies and millet breakfast dish for tomorrow right now. I really love the book - having a safe place to be vegan without having to modify whatever book/recipe you're reading. I'm going to try just having them over some kind of grain - that does sound yummy! Thanks!

I ate adzuki beans growing up, and loved them. Now, I cook them in water, and just sweeten slightly with agave, and it's really satisfying for a quick breakfast if I've cooked it the night before. Another dish that I just tried was with sticky rice with a little coconut milk, a little agave and adding the adzuki beans to it...yummy dessert!
