Hi there! I have been a vegetarian for 8 years and reading Alicia's book has made me look into becoming a vegan. This is not going to be easy, as I love cheese. So, I believe baby steps are in order. ~(:> I do need to share one thing. On a Sunday I decided to partake in vegan meals only so I made the Scarlet Roasted Vegetables and the Chocolate Peanut Butter Cup recipe from Alicia's book. Let me say, #1 - delicious recipes! (The only thing is the chocolate on the cups was a little runny - we live in Denver so I need to adjust for high altitude). #2 - I had the best night's sleep in a long time after eating vegan all day! If that isn't motivation to go vegan - I don't know what is! Thanks Alicia for all the hard work you put into the book and website. It has been inspirational!

Lisa,
I am also in Denver. I just started the vegan diet 2 days ago. Alicia's descriptions of the way animals are raised for food was too much. I will re-read that any time I feel like I'm sliding. The meat part isn't so hard as I haven't touched red meat for about 15 years. But the dairy will be tough. So I will just read her description of how the dairy cows are treated. And the way chickens are raised for eggs.....
shudder!
Where do you shop for organic veggies? I love the price and commitment of Vitamin Cottage, but the variety isn't very extensive.

Hi Jamie! The book got to me as well. It will be a challenge but I bet we are both up for it! ~(:>
I usually find what I need at Whole Foods, but they can be pricey. So, I sometimes find things at Sunflower Market or Sprouts, which is relatively new in Denver. Let me know if you would like to know where these are located
Do you know of any good vegetarian/vegan restaurants? I have gone to Watercourse Foods, but that is about it.

Lisa,
I have a Sunflower close to me, but I'm not thrilled with their veggies. I do shop some there. I have not been to a Sprouts. I'll have to google it and see if one is close. Thanks!
I was just reading about Watercourse. www.restaraunts.com has a great coupon for them. I will definitely have to try it. There is one called Roots around 38th and Pecos. It's pricey and is best to call ahead for reservations. We plan to try it very soon as well, but just have not yet. Aside fromwhats in Boulder, that's all I know about.
