Hello all! So here's my longwinded story...I never really liked the taste of meat and have always been the "drown it in ketchup" kind of girl. When I was a teenager I announced that I wanted to be a vegetarian, my meat and potatoes mother took me to see our doctor who told us that I needed to eat meat to grow and I could revisit when I was an adult. Fast forward 10-15 years and i am married with a small child, still battling the weight issue I have had my whole life and sick of covering my food with condiments. 1 year ago I went vegetarian. It lasted 3 months and then out of sheer laziness with cooking better I went back. I ate meat again for about 3 months knowing all along that something wasn't "right". So for the last 4 months I have been meat free and *mostly* dairy and egg free (I eat them out sometimes but not at home). Since I don't yet know enough about it all and am concerned about nutrition for her, I still feed my 1.5 year old (and carnivorous hubby) meat. She's not so into it though and usually just eats all her rice and veggies and maybe a couple of bites of the meat/fish and I don't push it. Just read The KInd Diet this past week and loved it. The only complaint I have is the inability to find many of the ingredients. I have ONE very small local health food store and they don't have much of it and the local larger chain grocer that I depend on for vegan fare does not carry the obscure veggies either. I'm pretty good at making substitutions or leaving things out all together so I am sure I will manage I just hope I get the same nutritional bang without them. Im not shooting for superhero just yet but plan to incorporate those recipes as much as I can. Not sure I will ever be into veggies for breakfast. I have not lost weight since I started this but thats because I've been eating a lot of junk but at least I feel healthier without all this animal fat in my body! Wish me luck!
