I spread hummus on one toast and guacamole on the other. I know it doesn't seem like much, but it hit the spot for a quick lunch. (You could always go back for more toast... the spelt bread that I bought is so tiiny.) And personally, I can never get enough of hummus and guacamole!
Ooh I love that lunch! I usually add some sprouts or veggies if I have them on hand and that's good too.
Today I made a Szechuan black-eyed pea salad from this month's edition of Veg Times. YUM! It had green pepper, jalapeno, red onion, black-eyed peas, garlic, and avocado tossed with a vegan Szechuan dressing.
