Not a big soup eater, but...Really Yummy Soup!

I'm not a big soup eater, neither are my older kiddos, but my hubby and youngest son love soup- of course that was before we went VEGAN- usually they would eat Clam Chowder or Broccoli and Cheese soups, etc...! My husband has been dealing with some health issues and wanted me to make up a good healthy vegan soup with tons of nutrient dense foods, that would also taste good.

So, this is one I made up and EVERYONE, even us non-soup eaters liked it. Everyone loved it so much, that I ended up having to make it twice in one week :-)

VERY Healthy Vegan Soup

Ingredients

1 Large Spoonful of Better than Bouillon Veggie Base
3 Carrots peeled and chopped
5 -6 Medium Potatoes peeled and chopped
2 Celery stalks (ends removed) chopped
1 Bunch of Green onion (ends removed) chopped
1 Zucchinni chopped
1 Yellow squash chopped
1/2-3/4 a bag of frozen white corn
5 to 6 Kale leaves chopped (stems removed)
4 Cloves of garlic- chopped, mashed, or pressed
1 cup Uncooked pearled barley
1 can petite diced tomatoes juice included
1/4 cup Nutritional Yeast

*** I use the following seasonings to taste (totally up to your preference) for me its about 3 good shakes from the container

Mrs. Dash Seasoning
Salt-Free Italian Seasoning
Sea Salt
Blackpepper
Ground Corriander
Cayenne Pepper

Fill a soup pot halfway with filtered water. Add all ingredients except corn and kale. For chopped veggies I tried to make the pieces large and chunky- not finely chopped. Bring soup to a boil then turn down to medium heat. Cook for 40 minutes then add the Kale and Corn. Cook another 15 to 30 minutes. Serve with Alicia's Vegan Cornbread :-) AWESOME!!!
