Saturday Morning Pancakes :)

Hi everyone! It's Saturday and I was really craving pancakes this morning, so I whipped up a batch of easy vegan pancakes that I thought I would share :). The recipe serves 2, or 1 very hungry big eater. The ingredients: 1 cup flour (I use white whole wheat flour), 1 TBS agave nectar, 2 tsp baking powder, 1 tsp vanilla extract, pinch of salt, 1 cup soymilk, 2 TBS veggie oil, and 1/2 cup ground almonds (grind them fine in a food processor). Mix the dry ingredients, then the wet, and don't over mix the batter. Then, cook them in a pan with earth balance or more veggie oil, the way you would regular pancakes. These guys have a tendency to stick, so just make sure there is a good coating of oil on the pan, or if you have non-stick cookware, use that! The pancakes are really good and hardy with the ground almonds. I made this up from a very bare bones vegan pancake recipe. Feel free to add carob chips, berries, or whatever strikes your fancy. Had this with a drizzle of maple syrup, some steamed kale, and a persimmon. I know, not superhero, but it's my day off :).

yum! thanks! you should try, if you havent seen it, the pecan crusted french toast recipe from the vegan cook book skinnybitch in the kitch. its also not superhero, but its soooo gooood
