I need road trip recipes

Hi everyone. I am looking for some easy ideas for meals for both a road trip and a week of easier recipes for staying at my parents. I live in MA but my hubby and I are driving back to WI where we are both from for the holidays. The drive is about 24 hours and we are hoping to go straight through. Never be caught unprepared though, right! I have a cooler that I want to pack because I am not sure what small town WI will even have for options at the grocery stores. Thanks, any help appreciated!!

Something I always bring with me are sprouts. I grow my own, but you can also buy them. They will keep for a couple days in a container in the cooler, but they also don't really need refrigeration if they are still growing. Just spray a little water on them twice a day! You could keep them in a tray, a jar, or a ziplock bag. The reason I suggest sprouts is because they are packed full of the good nutrients of greens, but they are smaller and transport easier. You can also grow them at your parents' place! It will minimize the need for grocery store stops, and you can put them on sandwiches, salads, or just eat plain. Sprouted lentils can be eaten raw, although they are a bit more dense. Sprouting beans in general gives them a slightly shorter cooking time and, at least for me, makes them less gas-producing.
I'm actually planning on road-tripping soon as well, and I plan to do more research on good foods to take. Expect a more detailed response tonight or tomorrow, and I'm sure tons of other people will have great ideas to share! I'm off to my voice lesson! Take care!

Thanks Evie! Great idea with the sprouts--they are diverse which is nice. Let me know if you do find any other great ideas. I really appreciate ideas that I may not have thought of :)
