just wanted to pass along my favourite lentil soup. i just came up with it on my own, adding all my favourites from past recipes. hope you like! preheat oven to 400 1 cup of green lentils (rinsed) 5 cups veg broth bring to a boil, then simmer for about 45 mins.
meanwhile, chop up (big hunks are fine) 1 zucchini 1 red pepper 1/2 an onion (big one) 1 jalapeno 2 carrots 2 cloves of garlic melt a tblsp of cocnut oil and pour it over shake each spice about 3 or 4 times over the mixture cumin gr. coriander turmeric 1 or 2 shakes of curry powder
place on a baking sheet and bake for 30 mins. (shake them around half way in)
place veggies in processor and blitz away. dump into lentil pot and add a handful of baby spinach leaves. stir and keep heated until they wilt a bit.
