I am new to being a vegan and I'm trying to incorporate more veggies into my diet but i end up just eating raw steamed vegetables which are too bland for me.
Does anyone know of any healthy things to add to vegetables to amp up the flavor without adding tons of calories?
Also, i want to eat more beans as well, any tasty and easy recipes with beans?
hey devon, check out my profile i posted a lentil soup that has lots of veggies and green lentils. i eat it almost everyday for lunch! also, i love roasting veggies. my favourite mix is brussel sprouts, beets, parsnip, and sweet potato. i chop it all into 1 inch cubes and toss it in 2 tblsp soya sauce and 1 tblsp olive oil, and lots of pepper. roast them at 400 for about a half hour. shake it around half way through. the beets make it all so sweet. they're amazing!!
that sounds yummy! yeah, i tried Alicia's idea for soup/stew and took the veggies that i needed to use and threw them in a pot with some vegetable broth. it's fun to see all of the veggies making friends in one pot, and they all go together so well!
Try Alicia's toasted sunflower or pumpkin seeds on veggies, or one of her dressings/sauces. You'd be surprised how much of a difference a couple sunflower seeds with shoyu can make!
I have seen a ton of people post this on here too in the past few weeks... but I have been putting a decent handful of spinach or other greens in my smoothies in the morning. I get at least a serving or so of veggies first thing in the morning and it really makes me feel like I have started my day so perfect!
I'm also not great with making my veggies exciting so I'll be anxious to see what others have to say... I think the roasted veggies sound wonderful. Can't wait to try that!
