help hosting a Christmas Cocktail party

So I offered to host a cocktail and hor'dourve Christmas party with a small handful of friends. Some who giggle and poke fun of my vegan diet, and some who are on the fence, and some that are intriguied but scared to make the leap.
I want to create a yummy, creative menu of cocktail and hor'dourves to serve that will shock my non vegan friends. Anyone have so must serve suggestions (that are not too time consuming or tricky?)
Variety is awesome!! Oh, and one friend is a huge cheese freak.

I made this almond "cheese" spread for thanksgiving...and I think I'm going to make it again for christmas. Everyone LOVED it. http://www.vegetariantimes.com/recipes/10951?section=
I used to be a cheeseball freak around the holidays, so this is perfect. I didn't soak the almonds overnight like it says, but it still turned out great.

Gretchen just you wait - the groundswell of folks tasting your stuff and going "OMG this is soooo good, when can we go veg/vegan" is gonna knock you over! :) Good luck, and let us know how it goes...
