I am new to the vegan, or flirting with it lifestyle :) I felt the need to make a change and have been doing pretty good! I am about half way thru The Kind Diet, it is hard to get a lot of the stuff to make some of the things where I am from. I live in Iowa, and we have a nice orgaic section at one of our grocery stores, just need to figure out the staples to have around at all times, any help or suggestions would be great!!
I live in kansas, not everything is readily available, even though I live by 2 whole foods. just stick with basics, rice, beans, the veggies and such. I ordered some teas and seaweeds through eden.com b/c I just couldn't find them. You can even make your own seitan if you can find wheat gluten, I haven't done that yet. I can find seitain, which I love and tofus, soystuff. You don't NEED that stuff though. I'm actually really trying to stick to the basics b/c it's so much cheaper, some of the other things can get really pricey. Always have brown rice kickin around, you can put veggies and beans on it, throw it into a wrap. I also always have some soup in the fridge. Miso, or just a good veggie one, like the cure all soup. dried beans are more economical, and I'm trying to use them, but I end up with cans a lot. best recipes, in my opinion so far are pasta rustica, caesar salad, guacamole dip, azuki bean and squash, the tofu cream is good for wraps, bean burritos...... there are really alot even the pickles are great! good luck and welcome.
Hi Jodi! Don't worry about the stuff you can't get hold of. Just flirt around with changing little bits. there's a lot you can do with just basic ingredients. Vegetables, Beans + bean products, grains etc. If you can get hold of 'Nori' the nori wraps look yum instead of a sandwich. good luck and keep in touch. x

I had the same problem as you where I couldn't find alot of the stuff I wanted to get to try new recipes. I was so consumed with trying to find things to 'replace' meat and focusing on things I couldnt eat that I was getting pretty discouraged, especially when I did try new vegan recipes and I didn't like any of them. I'm focusing on some basics right now and making some simple changes. I switched alot of my white pasta to whole wheat and purchased the earth balance vegan butter at the local supermarket. I havent tried it yet but I hear it tastes the same as Becel. I also purchased the almond milk and some rice and lots of fruit. Like Angela said, it can get pricey so stick to some basics. Just try to think of some basic, non animal byproduct foods that you like and start building from there. Hope it goes well!
