I just to Papa G's in Portland, OR for the first time, and had their Tempeh Reuben. It was delicious. This week, I took a stab at making it at home, and it turned out marvelously. My boyfriend ate 2 sandwiches! I served this recipe with oven roasted brussel sprouts and shallots, tossed in olive oil and sprinkled with s/p, crushed red pepper flakes, and 21 seasoning blend from Trader Joe's.
1) The Vegan 1000 Island Sauce (this makes enough for 3 sandwiches): -3 Tbls of Veganese -1 Tbls of Ketchup -2 Kosher Dill Pickes, Finely Diced -2 Tsps of Cayenne Pepper -2 Drops of Secret Ardvark Sauce (your favorite hot sauce will do) -Pinch of S/P
2) Toashed Rye bread (spread with Earth Balance)
3) Warmed Saurkraut
4) 4-6 Strips of Lemon Pepper Tempeh, or your favorite tempeh flavor
*Put all ingredients between the rye bread, this takes less than 20 minutes to make with the roasted brussel sprouts. A great weeknight meal.
