Made 2 appetizers from TKD for a party tonight- both delicious & got compliments!I made the artichoke dip and the cheese/guac dip. I used the Follow Your Heart brand of cheddar and it was awesome, but didn't melt...even after 35 minutes in the oven. It says on the package it would. Any ideas? The dip was also a little watery, is that normal? It still tasted really good. I also made the chocolate peanut butter cups- totally awesome- as everyone else has already said. I couldn't find the vegan graham crackers at Whole Foods, so I used a vegan graham cracker crust & mushed it up. Where have you all found them and what are the brand names? They didn't have "Health Valley" brand at this HUGE Whole Foods I went to in Oakland, CA...Still loving TKD...I'm on week 3 and broke my superhero streak for some fun vegan dishes. :)
I made the SAME dishes for the holidays! The taco dip was delicious. I figured my cheese didn't melt because I cut it into thin strips since shredding the block seemed like it would end up in mush. I LOVE the peanut butter part of the cups, but the carob chips left much to be desired. I specifically bought vegan carob chips, but they tasted more like baking chocolate. Very bitter, not sweet. Nowhere on the package does it say they are unsweetened chips. Do you know what brand you used? I would love to make them again. Also, I crushed up Teddy Grahams since the stores were sold out of graham crackers (and TG are vegan as far as I've read on the packaging).
Hey Caroline!I experienced the same thing with the cheese/guac dip. I think it may be too many tomatoes? I love tomatoes and added lots, and I think the water baked out in the oven. Maybe try adding less tomatoes next time and see if that helps! That's my plan:)
Caroline, Follow Your Heart Cheeses melt under the oven broiler. However, make sure you keep your eye on it, as it will burn fast. It only needs to be under the broiler for about a minute to a minute and a half. When I make the dip, I put in a 350 degree oven for about 15 minutes. Then I turn on the broiler until the "cheese" melts. I recommend using a dish bigger than 8x8 to avoid overflow. Drain tomatoes more for less watery dip. Whole Foods has the vegan chocolate teddy bear grahams. It's their 365 brand. There are also the bunny chocolate grahams by Annie's. Even Teddy Graham chocolate bears are vegan. I break them up into smaller pieces for the peanut butter cups.
