Christmas Dinner!

I'm super excited! My mom asked me to make a vegan meal for our family's Christmas dinner! I'm planning on making the Polenta/Seitan Casserole, but was hoping for some side dish suggestions...

Anyone else planning on an all-vegan meal for Christmas? I think it's going to be a great way to show love to each other, and ourselves!
