Gingery Carrot Raisin Salad

Courtesy of The Teen's Vegetarian Cookbook

Ingredients:
2 1/2 cups of shredded carrots
1/3 cups of raisin
1 1/2 Tablespoons lemon juice
1 1/2 Tablespoons brown sugar, maple syrup, barley malt or lemon juice concentrate*


1. Combine carrots and raisin in a medium sized bowl. **
2. In a separate bowl, combine the remaining ingredients and stir well. Pour over carrot-raisin mixture and stir to combine.
Serves four. ***

* - I use maple syrup because it's cheap, healthier than brown sugar and more readily available than the other choices.
** - Add 1 cup of chickpeas for a more filling salad.
*** - Extremely small portions so I double the recipe to serve 6.

got a bag of craisins think ill try this with that instead of raisins
