Skeptical Mom

Yesterday my Mom wanted to know why I went vegan. After explaining it to her briefly we talked about the book "The China Study". She has not read it yet and I will give it to her when I'm done. I was telling her about the studies he did on protein. She is 79 years old and has eaten meat all her life. Although a little overweight she is really very healthy and has a lot of energy.
How do you respond to something like this?
I know several women in her age group that are very healthy and meat eaters.

I would explain to her the many ways that food production has changed in the last 10-20 years. Fifty years ago, her chicken was not pumped with antibiotics. The cows probably ate grass and lived fuller, freer lives, instead of eating corn and wading in their own feces. E coli outbreaks are much more common now than they were in 20th century and it all has to do with factory farming.
