Lunch ideas?

Hi everyone.
I need some quick & easy ideas for lunch to take to work. I normally have a sandwich but bread plays me up sometimes, so I really want to reduce the amount I eat. What kind of things do you have?

Today I had leftovers from last night: squash, onion and roasted chestnut casserole and collards. My protocol is to make extra dinner, OR make a pot of "This is just for my lunches" type thing. Then I eat that for lunch for 3 days or so. Hope that helps.

I cooked brown rice over the weekend and then heat it up with tomatoes and basil, similar to one of the recipes in the book.

I make a big veggie salad and top it with beans any kind and have a side of leftover rice, millet etc...

I am really trying to find ways to eat more live, raw foods for at least one meal a day. I am having issues also preparing a healthy lunch that has lots of good nutrients in the food without having to microwave it and loose some of the nutrients my body needs.
I am just on a tight budget and not very creative! :)
Any suggestions?

I really like a good macro bowl for lunch, it's usually a hodge podge of whatever I have. My problem is this micro issue at work. I need to resolve that and buy a thermos. I make this sauce for the macro and keep it in little container, you don't have to use much but it makes the dish- it's tahini, seseme oil, and soy sauce.
My non-vegan non-superhero boyfriend has a serious crush on it!
