Sicilian Collard Greens

This looked so good! I made it last weekend and it turns out I don't really like the collards. :( I think I used to, but I think they were cooked to death the old-fashioned Southern way with a greasy ham bone. Not the way I want to go now. So I'm wondering: wouldn't this recipe be just as good with kale or Swiss chard -- maybe even mustard greens? Or...?

I also made these this past weekend and loved them. I thought the collard greens tasted great. Were yours organic? That can make a big difference in taste esp with veggies and fruit. I find the organic stuff less bitter and more flavorful. I think the recipe would also work really well with any of the greens you listed or maybe some of each.

Thanks, Shelz. I think I'll try it again with some kale & Swiss chard. I'll bet that's yummy.

Shelz, completely agree about organic greens vs. not. I made this with organic collards and it was amazing! I highly recommend splurging on some good quality balsamic as well... it really makes the difference in this recipe!

Seriously, aren't organic, full-on collards beateous things - so pretty - LOL I adore this recipe - and ya know what's delish? I had some left over, and some (also leftover) brown rice, so I mixed them together and put them in a half of a small roasted butternut squash - AMAZING. :)

Mmm this is one of my fav recipes i tried it with Swiss chard not bad!!!!
