Hello!
Just introducing myself. I have been creeping around the last week or so :)
I was Vegan for 2 years, then had a 'I guess I'm ok with Chicken, Fish and the occasional slice of cheese' 9 month spree. Picked up the book one day at Barnes and Noble and jumped back on the horse! I forgot how wonderful it feels to eat vegan! I can eat a hole bunch of yummyness and not feel that gross icky full feeling that makes you just want to lie down!
I challanged my husband to go vegan (when he found out not eating dairy could help with his asthma he jumped on the boat). He did pretty good for about 3 months (he was still eating bit of chicken though). Ordered a beef burrito at a resaurant after eating mostly vegatarian... to save the gross details he found out what it was really doing to his digestive track first hand! He was very much raised on McDonalds so seeing the look on his face when I'm making new dishes is great. The 'it looks gross' expression then followed up with 'Omg... this is GOOD!'. I haven't noticed any changes in his asthma yet (it's only been about a week and half for him) but he has much more energy and his skin is looks a lot healthier.
One question so far. I'm going on a 5/6 day road trip (Ca to Va). Any advice or recipies on non-perishable goodies that travel well? I'm concerned I won't be able to find many vegan restraunts while traveling.
Just a couple ideas...vegan jerky (I found it at Whole Foods.) It's made from seitan and comes in Hickory and Teriyaki flavors. It's a little messy, so have napkins handy. Also, for a snack, I'll put sunflower seeds, almonds, walnuts, carob chips, and whole grain cheerios in a baggie for my own "mix." You could also pop some popcorn and put it in baggies for the road.
