Runner/podcaster/teacher flirting with the veggie life!

Hi all, I'm a 21-year-old senior in college who accidentally became vegetarian over winter break (staying with fiance's family, they're 80% vegetarian anyway)...and am thinking of sticking to it. I definitely want to make changes in my diet both for environmental reasons and with hopes of losing weight and improving my running!
I co-host a podcast with my 4 years' vegetarian, 10 years' best friend Beth, called the Penguin Tracks Podcast (visit us at http://penguintrackspodcast.blogspot.com) about all things running-related, geared toward beginners and with plenty of other food and fitness tidbits mixed in.
I've lost about 22 lbs so far (5 in a month from being 80% veggie) and am hoping to lose another 70-80 over the next year or two! Also learning to cook...
Anyway, hoping to find some recipes and advice for making the switch (especially with an omnivorous fiance, busy schedule and college budget!). But I like forums, so perhaps I'll enjoy this one.
What do you eat after you run? I find that after I run or work out that's when all the cravings for all the bad food comes out. I am not a big runner but I am training for two 12km ( about 7 or 8 miles) runs this year and maybe a half marathon. thanks natalie
make sure you drink a lot of water...especially in wintry weather when you don't feel as dehydrated. that helps me tons. and drinking chocolate soymilk is better than any kind of those protein drinks! also it's good to take in about 2/3 carbs and 1/3 protein after your workouts...things like hummus on toast are good.

I just read your post...I'm 23 and newly married (in May). I just made the commitement to the Super-Hero/Vegan status recently. I too am working on a budget (budget of two newlyweds) and would love to exchange ideas/thoughts with someone with a similar lifestyle.

hey Lauren! I accepted your friend request :-) I don't really know how to use the forum too well yet.
I recently copied a few recipe's from my fiance's mom's copy of How to Cook Everything Vegetarian. it's almost 900 pages of recipes and cooking tips. how comfy are you in the kitchen?
I know I'm just learning my way around everything...just discovered the amazing money-saver that is the bulk bins at Whole Foods!
