breakfast food ideas anyone?

I just went shopping today and picked up a bag of organic lentils and soy beans, brown rice and brown rice pasta, butternut squash and some other veggies. Does anyone have any advice on what to eat for breakfast? I would love to hear from those of you who have been doing this for a while. Thanks.

Right now, one of my favorite things is apples with peanut butter. It was a childhood favorite of mine and just happens to be vegan. Oatmeal is also pretty wonderful first thing in the morning but takes a little longer to prepare.

I do love oatmeal and the apples w/ peanut butter sounds good too. Thanks for the suggestions. Do you use rice milk, water or soy milk to make your oatmeal?

Some of the things that I love for breakfast:Baked beans (Amy's are great) and toast with Earth BalanceProtein shake with Vega protein powder, blueberries (or any frozen fruit), soy yogurt, cinnamon, flax or hemp oil and 1 tbsp of molasses.Hot brown rice cereal with raisins, nuts and seeds, agave and almond or rice milk.Toast with nut butter and banana.

I had steel cut oats for breakfast this morning. Cooked them with water and just added a bit of soy milk in my bowl with a sprinkle of fruit sugar. I know I coukd of added a banana or something like that but I'm not a big fruit person. Love my vegies!!

I love my porridge (oatmeal) for breakfast. In wintertime, I top it with stewed apples, cinnamon and toasted almond, and in summer, whatever fresh local fruit I have - strawberries, blueberries, peaches etc and a few nuts (pecans/almonds/cashews/whatever I have in the cupboard). I just use water to make mine.

I love getting the soy choritzo from Trader Joes and frying it up was a small amount of extra firm tofu, I just take a small block of tofu and using a fork mash it up in the pan to brown, then add the chorizo and fry it up and mix together so it's well combined, have that with some Morning Star breakfast strips and you're good. Soooo tasty.

For a quick, tasty breakfast try Vans frozen waffles topped with a dollop of soy yogurt and fresh berries.

French Meadow Bakery makes some amazing bagels (in freezer section at Whole Foods), Hemp, Ezekiel and Spelt. It's fast and easy, add some tofutti cream cheese, and a piece of fruit. You are in business.
