Saw this one the other day in a cookbook I have. I've never tried it so can't say if its any good or not - let me know if you try it and it works out for you!
8 oz whole wheat or brown rice fettucine 1/4 cup refined coconut oil 1/2 cup vegan creamer 1/4 cup vegan parmesan cheese 1/4 teaspoon pepper 2 cups cooked fresh or thawed frozen peas
Cook pasta according to directions in boiling salted water. Drain and reserve 1/2 cup of the cooking water. Melt the coconut oil, whisk in the creamer and bring to a simmer. Whisk in the parmesan, pepper and 1/4 teaspoon of salt. Stir the sauce into the pasta and add the peas. If it seems too dry add 1/4 to 1/2 cup of the reserved cooking water.
Hey this is one that I have. Haven't tried it yet, though. Let me know how it is!
(2 large or 4 small servings)
Enough Fettucini pasta for 2 people 3/4 cup raw cashews 1/4 cup raw pine nuts 1 tbsp lemon juice 1 garlic clove 2 tsp nutritional yeast 1/2 tsp salt 1/2 tsp ground thyme 3/4 tsp black pepper 3/4 cup water
In a large pot of salted water, boil the pasta. While pasta is cooking, blend the remaining ingredients in a blender or food processor until smooth. When pasta is cooked, drain noodles and return to pot . Add the sauce to the noodles and toss well. Serve immediately.
