Does anyone have a good vegan fettucini alfredo recipe? It's one of my son's favorite dishes and I would love to make it vegan and have it tasts just as good for him!!
Saw this one the other day in a cookbook I have. I've never tried it so can't say if its any good or not - let me know if you try it and it works out for you!
8 oz whole wheat or brown rice fettucine
1/4 cup refined coconut oil
1/2 cup vegan creamer
1/4 cup vegan parmesan cheese
1/4 teaspoon pepper
2 cups cooked fresh or thawed frozen peas
Cook pasta according to directions in boiling salted water.
Drain and reserve 1/2 cup of the cooking water.
Melt the coconut oil, whisk in the creamer and bring to a simmer.
Whisk in the parmesan, pepper and 1/4 teaspoon of salt.
Stir the sauce into the pasta and add the peas.
If it seems too dry add 1/4 to 1/2 cup of the reserved cooking water.
Good luck :o)
I'll give that one a try thanks for posting it Kether!!
Wow that one looks amazing and I think I even have most of those ingredients!! Thanks Jessy!
Thanks!! I'm sure out of these there will be one he likes!
Hey this is one that I have. Haven't tried it yet, though. Let me know how it is!
(2 large or 4 small servings)
Enough Fettucini pasta for 2 people
3/4 cup raw cashews
1/4 cup raw pine nuts
1 tbsp lemon juice
1 garlic clove
2 tsp nutritional yeast
1/2 tsp salt
1/2 tsp ground thyme
3/4 tsp black pepper
3/4 cup water
In a large pot of salted water, boil the pasta. While pasta is cooking, blend the remaining ingredients in a blender or food processor until smooth. When pasta is cooked, drain noodles and return to pot . Add the sauce to the noodles and toss well. Serve immediately.
I just had to tell you all that I tried the recipe Jessy Farrell posted the link to above and it turned out amazing!! My son couldn't even tell the difference and my husband, who's new to the whole vegan idea, loved it!! Here's the link to the recipe and I'm about to order her cookbook from amazon.com!! So excited to get even more delicious recipes for my family!!
