Vegas is great for the vegan. I never have trouble getting a great meal. The restaurants seem built to cater to your every whim. Just tell them what you don't eat and they'll adjust whatever is on the menu to your tastes. Even better tell your waiter you'd like to have the chef create you a vegan meal, let him do his magic. Chefs love to be able to ad-lib, happy that you are giving them creative license.

I know you probably aren't on your way to vegas anymore, but just incase someone comes on for reference:
you MUST check out Ronald's Donuts! Check it out online! It was the best decision I made in vegas...quite a ways off the strip (need a car) but completely worth it. They have a WIDE selection of vegan donuts, and the soy-cream filled and maple syrup glazed are the best!
The restaurants really do cater to so much, and if you look at HappyCow.net, there is a WIDE selection of specifically vegan, or vegan-friendly restaurants. I didn't check it out, but I heard the red-velvet cafe is phenomenal.
