I gotta admit, I like most of the recipes, I didn't care for this one. Although I didn't have any Umiboshi Vinager, so I had to use something else.

I made this recipes this evening and if came out perfect...polenta was fluffy and seiten was not chewy and it was cooked thoroughly in 40 minutes. Next time I bake it I will use vegetable broth instead of water which I thought about doing in the beginning.

It was ok. Definitely needed more salt. I would maybe try it next time with fake sausage instead of seitan...and instead of layering the "meat" on the bottom, just mixing it in with the polenta. A bit of cheese melted on top would help as well.

My husband and I didn't care for this recipe AT ALL. I was so dissapointed b/c the other recipes are so delicious.

I made this the other night but I used millet. I didn't care for the taste of the seitan. My 15 year old son like the veggie part of it and so did I. The veggie part wasn't runny at all. Tasted just like comfort food. Yum

I made this tonight! I couldn't find seitan so used meatless crumbles. It was not my favorite. I'm new to the plan and have made Pecan encrusted seitan which was AWESOME. Also really good was the rustic pasta, the rudon noodles with paprika, and the miso soup. Can't wait to try some of the desserts.

I made this w/polenta last night. Could only find chicken flavored seitan in small pieces, but it was fine. I thought it was pretty good and VERY filling. Had leftovers today and was happy with results. Great with a nice side salad to balance the heaviness of the dish. I did triple all her seasonings and that worked out good for me. Reminded me of a meatless shepards pie type of comfort food!
