Polenta Casserole with Seitan

I just made this and it looks nothing like the picture in the book. After cooking for 40 minutes and sitting for 15 or more, it never set up and is still mushy. I don't know what I did wrong.

Mine was mushy too, but it tasted fine. It settled more firmly for leftovers the following day.

I made this the other day. The day I made it, my husband and I thought it was OKAY. However, the next day it was so much better. This is definitely more of a breakfast/brunch type casserole. The second day it was a lot more firm and it made the meal taste better.

Its in the oven...I hope it turns out. Ours was runny, I hope it sets up in the oven. We shall see.

I made it, with a lot of subsititutions. I used rice vinegar instead of umeboshi, and didn't have the asparagus. The flavor was a bit lacking, and maybe I'll marinate the seitan in the future instead of just using it straight from the package. However, the texture if mine was amazing! My family thought it was an eggy frittata. I'd suggest then, to those who got runny results, to use a premade polenta like this brand: http://i14.photobucket.com/albums/a306/digitalmuse/Food/polenta1.jpg

I think in the near future, I'll try to find a vegan crust recipe and use the polenta/cauliflower/peas/corn mash (maybe add some zucchinis) and make a vegan quiche!

I made this tonight and it never set up. I cooked it longer hoping it would set, but it didn't. I thought it was terrible. The consistency was more like a pot pie. And it had very little flavor. Very disappointing for the work involved.

I want to try this but I'm sure my family won't care for it. I like everything in it but my two girls (5 and 7) and husband are really picky. I have more problems deciding what to make but what they like! I think if I try this I will have to make subs for most of the veggies. Oh well even if they don't like it I hope I'll enjoy it for leftovers.

Okay... so I was totally prepared to make this tonight, but I don't think I will :( I am the only one who's going to eat it so I don't want to have a ton of leftover of something I don't like. Guess I'll throw the seitan back in the freezer and come up with another idea for tonight. Cauliflower steaks maybe! Oh, but now I don't have a protein. Man!

Changed my mind. I'm making it and I will post my feelings on it later :) I figure I have all the ingrediants, I might as well!
