I'm making it right now and I used tempeh instead of seitan because I had some on hand. I also used millet rather than polenta. I also increased the spices (tahini, shoyu, and ume vinegar) because the batter stuff wasn't salty enough. I also added a couple pinches herbes de provence. It tasted good before I put it in the oven so I bet it's even better when it comes out!
