peanut butter cups

Hi everyone! I made the chocolate peanut butter cups from the book today...they were pretty oily...I'm thinking the oil in the natural peanut butter plus the earth balance butter was just too much...it even soaked through the liners! Has anyone else had this problem? any suggestions? The carob chips are going to take some getting used too also.....

I haven't had this problem. I've used "no stir" natural peanut butter. Is the stuff you bought "no stir". It's possible that made a difference. I could see the other stuff being a little more oily especially if you're using a new jar when it's hard to get all of that oil from the top stirred in.

I also used grain sweetened chocolate chips rather than carob chips and they are SO good.

Don't give up. These things are awesome!!! I keep mine in the freezer because I prefer the consistency.

I didn't have a problem with oilyness but I found they took longer to set up and when they did I didn't really ... well... ummm .. love them! A lot of us Canadians have grown up on maple syrup but I think it was just too sweet and I was even a tbls short. I would make them again with a different sweetener ... anyone have any ideas? I agree with you Sarah about the carob chips .. it was my first time trying them as well and now that I know something better tasting exists I think I will be trying it the next time I make them.
