Let me start by saying the Lentil stew and the Eggplant Chana Masla turned out amazing. Very yummy. Full family approval.However, the whole wheat biscuits and the cupcakes were only compost worthy. The icing for the cupcakes was great - however the cakes were dense and didn't rise at all. "Those are the worst cupcakes ever mommy", said my four year. I just finished the biscuits and they came out looking exactly as they did going in.What didn't I do? I bought the 'Kind Diet' last week and have been enjoying the recipes. Perhaps I will be giving up the baking before I even get started.
Any tips or ideas??

I am not familliar with the recipes you are trying but seriously the best way to kinda start vegan I think is the baked goods... I mean Bomb vegan cupcakes will change anyones ideas about what vegan food is.. and it is actually real easy to replace all the non vegan stuff with simple things..
if you are having rising problems maybe your Baking powder is bad. Whole Wheat flour usually doesn't rise that well on it's own. You may need Whole Wheat Pastry Flour. There is a difference.. I would look there first..
Also and a lot of people don't want to believe this but your oven LIES to you.. even if it is new. I have had 3 new ovens in 6 years due to mice and moving and all 3 of them were never always spot on when it comes to temp. Get an oven thermometer. It is worth the money and put it on the rack you intend to cook on.. there can even be a difference from the top to the bottom.. and just because the oven beeps when it is at temp I have found mine tells me it is there and can be as much as 100 degrees off so I always trust my oven thermometer..
Again I do not know the recipe but check the flour, then the BP and next time you are at the grocery or red circle store or smiley place whatever grab one they are not a lot of money and save a lot of heartache..
oh and when I say it is off on the preheat I just give it another 10 minutes or so and it usually gets there..
Hi, I made two batches of these cupcakes yesterday & they were yummy. Although I only got 10 out of each batch. And that was with only half filling each liner. I made my own vegan chocolate frosting and the kids loved them. Vegan baked goods always seem more dense but it does depend on the flour. Whole wheat flour is the most dense so I use whole wheat pastry flour or a combination of flours which is what the recipe called for. I agree the baking powder/soda is what makes them rise. I didn't realize there was a difference between whole wheat flour and whole wheat pastry flour. I made the Coffee Fudge Brownies from The Kind Life book, but used just regular whole wheat flour. Thank you for your help here, I was very frustrated today:)
This is so interesting. I had the same experience as Tracie. I made the cupcakes last night and they had a funny taste to them and the frosting was just ok. I used every ingredient as listed in the recipe. The only difference was I used whole grain pastry flour instead of whole wheat pastry flour (I couldn't find the whole wheat version). Anyone, think this could have been the problem? I also made the biscuits a few weeks back, again with the whole grain pastry flour. They were ok but a little flat and broke apart easily.
I've made so many recipe's from the Kind Diet that have come out great, including Healing Soup, Fried Rice, Oatmeal with Apple and Dates, Adzuki Beans and Kabocha Squash plus several others. So again, I'm thinking maybe I'm just great at baking.
