Ok, so I've eaten raw spinach quite a few times in salads, but the other day, I cooked spinach--I sauteed it in veg broth and garlic... and it was so TOUGH and RUBBERY it was almost impossible to chew! does anybody have suggestions? what are YOUR favorite ways to cook spinach?
I like it with sweet potatoes. First slice sweet potatoes and onions thinly - a mandoline works well for this. Then heat a little olive oil in a saute pan. Add the onion and cook a little, add some chopped garlic and the sweet potato and cook until the sweet potato is cooked - you can add a little water and cover the pan to help it soften. Now add the spinach leaves and season with freshly ground black pepper. Cook until the spinach is wilted. Enjoy!
