easy acorn squash recipes?

greetings all,
i went to a local market and just bought a few things that i like to eat when some one else makes them, but not so much something i would cook, basically veggies that scare me. so acorn squash? any simple, must try recipes? do tell!!! thanks!
I used to bake it and just put a scoop of cooked rice w/roasted almonds in each half afterward. i had that at a restaurant once and it was so yummy.

Acorn squash, sweet potato and corn soup.
1 large onion
2 cloves garlic
1 medium acron squash
4-5 sweet poatoes (medium too)
canned corn
Olive oil
bay leaf - optional
boullion
water
chilli flakes optional
I made this at our Thanksgiving meal - SO DELICIOUS.
Ok so first peel the acorn squash, scoop out the seeds and cut into bite size pieces - not too small, then peel and chop the sweet potatoes - same premise.
Chop an onion and about two cloves of garlic - I chopped small.
In a saucepan heat some olive oil - not virgin. Then saute the onion and garlic, add the squash and sweet potato chunks. Add a bay leaf, salt and a pinch of sugar.
Let all the flavours mingle - if you think that it needs more oil add it - don't let it burn.
Mix the boullion with water, then top with water so it isn't lumpy
Add this to the soup - I use about a liter and have some on stanby
then let is simmer on a low heat
keep stirring - don't let it burn!
After about forty mins - to an hour it should be done
Then blend it and add the drained canned corn.
I always add chilli flakes because I like the kick and it warms you up.
