Gluten Free

So I am on day 4 of being gluten-free, and the pain in my side is going away. The problem is, I am running out of ideas about what to eat. Yves Meatless Ground WAS my savior. now That I am gluten-free, I can not find and GF meatless products like the deli slices and Tofurky.

I need something besides rice bread, fruits n veggies and regular tofu.

Any suggestions? When I Google, I get a barrage of sites that are not specific to what I'm looking for.

I am a gluten-free Vegan. I cook a lot of bean recipes. You can find recipes in "The Gluten-Free Vegan" by Susan O'Brien. Also try these blogs: http://www.fatfreevegan.com/gluten-free/index.shtml and http://gluten-freerecipes.blogspot.com/. This last one is not vegetarian, but has some recipes that you can use.

I have Celiac and I have to avoid soy (though some slips in here and there). Unfortunately, there are not many gluten free meatless things out there.

Tofu pups is a brand of hotdogs that are similar to Yves. I have seen them at Whole Foods.

There is a brand of Tempeh that is made specifically for Celiacs and it is flavoured.

In the freezer section, you can find Amy's that are gluten free and vegan.

Tofurkey, Yves and most others are completely out if you are avoiding gluten.

Organic sunshine burgers are gluten free and they come in great flavours.

Beans are the way to go when being gluten free.

Hi Jon, I've been on this gluten free diet as well (well actually elimination diet) so no soy, wheat, dairy sugar etc) and I substitute with a lot of rice products, chick peas, beans & lentils. I think the hardest part is really taking the time to read everything on every label. It can be a drag. I got rid of all 'fake meats' and started roasting squash, mushrooms, and rice and rice pasta (its not all bad), rice pasta lasagne. Try & take it one step at a time, one meal at a time & think about eating simpler meals, almost composing them in the beginning. A little rice, a little tofu some veg etc. Good Luck!

Jon, have you tried using the tofu in different recipes. The great thing about it is that it takes the flavor of what ever you mix with it. I make a "feta" salad with the tofu. I got the recipe from "the Hip Chicks Guide to Macrobiotics. Crumble 4 ozs. tofu and mix it with 1 tablespoon Umeboshi Vinegar. Use it in a salad and add more vinegar, kalamati olives, or olive oil to taste.I have been gluten free for 5 days. I feel so much lighter and clearer in my thinking. The anxiety and slight depression I felt has been relieved so much. I started going sugar free today. I have a sweet toothe so that is a bit of a challenge. I love the rice crispie treats from Alicias book but find that they bind me up a bit. Does anyone else have this problem?

Do you guys know of any gluten free graham crackers that you can get? I just found out I have celiac and I love the peanut butter cups. Suggestions?

I like the Jo-Sef brand. I do not like the health valley rice bran ones. I also tried and liked some by a company called Kinnickinnick. Thank goodness gluten free products are so easily available now!

Which one is better the cinnamon cookies or the Vanilla ones? Is there one that tastes more authentic than the other in the Jo-Sef Brand?

I've only had the vanilla ones. They taste similar to regular graham crackers, but I could definitely tell the difference when eaten plain. The Kinnickinnick brand doesn't have a flavor, but I like the Jo-Sef ones better.
