crispy tofu slices question

Hi there,
I want to make the crispy tofu slices on page 158, but I have questions about the tofu. It says to use a package of savory-flavoured baked tofu. Does tofu come pre-baked? Am I supposed to bake extra-firm tofu in the oven before preparing this? If so, how do I do that? Will it still work if I just buy some extra-firm tofu, drain the water, and then prepare as described?
I've never ventured into the world of preparing tofu, but from what I've tried in restaurants, I prefer a crispy tofu. Any other advice?

Yes, you can buy already baked tofu. It will be light brown colored and found in the faux meat section at the grocery store. They will come in flavors like terriyaki and savory.
You can also bake the tofu yourself, which is time consuming but tasty. There is a really good recipe for baked tofu in Vegan with a Vengence.
Using un-baked tofu will definitely taste different, though it might not be bad.
