Hi there, I want to make the crispy tofu slices on page 158, but I have questions about the tofu. It says to use a package of savory-flavoured baked tofu. Does tofu come pre-baked? Am I supposed to bake extra-firm tofu in the oven before preparing this? If so, how do I do that? Will it still work if I just buy some extra-firm tofu, drain the water, and then prepare as described?
I've never ventured into the world of preparing tofu, but from what I've tried in restaurants, I prefer a crispy tofu. Any other advice?
