Mochi Waffles!

She didn't say how much fun it was to watch my hard little rectangle of mochi bloom into this huge, light Belgian waffle-looking thing that was just delicious with a little Earth Balance and maple syrup! Yum, yum.

I went out and bought a Belgian waffle maker last night just for this recipe. I've been drooling over the picture in The Kind Diet for weeks and was not disappointed this morning! I topped mine with mashed banana, strawberries, and vanilla agave syrup. YUUMM! I feel amazing after that breakfast.

The Mango yougurt stores offer Mochi...I don't think they do vegan desserts though.

If you can't find it locally REALLY consider ordering it....it is so wonderful - I'm craving this and will indulge this weekend!

i haven't had trouble finding mochi in Toronto. They have them at whole foods, health food stores and japanese stores.

I found it here in Kitchener, but only at one health food store... I imagine it would be harder in Prince George. I've heard good things about ordering it online, though.
I bought some today... looking forward to trying it tomorrow. I hope my toddler likes it!

i LOVE the cinnamon raisin mochi! So simple yet so delicious! I feel like I'm having a little sweet treat instead of something good for me :)

Ok, I tried it but found it really dry. I tried it in the waffle iron and in the frying pan. did I do something wrong?? It seems to go directly from crazy-chewy to dry.
