I haven't tried the mochi waffles yet ... need to get a waffle maker. I did buy some mochi (cinn-raisin) at Whole Foods though and tried the "danish" recipe on the packaging. Just substituted Tofutti for the cream cheese ... was really, really good! Mochi is so delicious ... love the chewy texture!

I'm thinking I might have. I tried puuting a little extra oil in the pan and it turned out great yesterday. I'm not sure how to improve the waffles, but I'll work on it, My man doesn't like it because it "tastes like rice cakes", but my toddler does.

After 4 days of searching I finally found mochi at a small natural foods market. Even the sushi chef a wegmans had no idea what I was looking for and showed me something that looked like multi-colored mochi candy. (?) cant wait to try the waffle and also the dumpling recipe from the book!

If you're in Toronto you can find it at The Big Carrot (Danforth Area) or Whole Foods (Yorkville).

Cheers!

are you supposed to layer the mochi slices next to or on top of each other?

Christina, layer them next to one another. I know the whole process seems unusual at first, but I promise they come out crisp, puffy, and delicious.

is there a way to make them not so chewy? mine were way too chewy.

Elise, I had to cook mine a little longer than 4 minutes. They came out more crispy and less chewy this way. Adding a little more brown rice syrup might help them out too ;)
