I can not find dried black soy beans in Chicago...I checked all Whole Foods, local grocers, etc. Is there a good substitute that would taste great in the stew recipe on page 164 of the Kind Diet?

I found black soy beans in the can but not sure how to adjust the recipe with canned versus dried. I also have regular black beans.

Any suggestions?

I live in Los Angeles area and had the same problem. What I ended up doing was ordering the black soy beans from Eden Farms online. I had to buy a 25 pound bag but split it with a friend. I also saw them in smaller quantities on Amazon but they were not organic.

I made this for dinner tonight using the canned black soybeans. I just added them in at the end as if I had just cooked them...it was yummy!!!
