Today I had some people over for dinner. I've never fed them before and I took a total plunge and made almost the entire meal from The Kind Diet. A completely Vegan meal.
We started with guac and organic blue corn chips. Then my recipe for Potatoe Leek soup. Thin Mushroom pizza and Sicillian Collards. Peanut butter cups.
It all went down super well. Though I had some trouble. I had to use fresh Shitake and couldn't find porcini so I use portobella for the pizza. I also could find Umeboshi paste so I used Miso in the tofu cream. I imagine this changed the tase, but it was still yummy. The peanut butter cups didn't really set though they had 3 hours at 0 degrees. Any ideas.
All in all a great meal with great people. Interesting though that Although my Husband was concerned that people might be hungry (I didn't sreve HUGE portions) 3 1/2 hours after the meal is over and neither of us are snacky and we never got to that 'stuffed' stage.
